Goa’s Newest Opening AAMI Blends Café Culture with Slow Hospitality

Goa, May 20 : Goa’s evolving café culture welcomes a new addition with the launch of AAMI Café & Bistro, a space designed around comfort, connection, and the quiet luxury of slowing down. Located in Candolim, AAMI brings together an all-day café & bistro, thoughtfully designed Airbnb stays, and a restored Portuguese villa that feels deeply rooted in the softer, slower rhythm of Goa itself. 

The name itself translates to “we” in Konkani, a philosophy that sits at the centre of the space and shapes everything from the atmosphere to the food. Located alongside a beautifully restored old Portuguese home by the Lobo family, AAMI draws from the property’s original character through details like laterite stone walls, terracotta roofs, high ceilings, skylights and a traditional balcao-style porch that connects the spaces together. A beautiful garden curated by the family’s Vintage Gardens and furniture sourced from Pink Elephant further add to AAMI’s lived-in, residential character. 

The design language of the café reflects this philosophy closely. Soft lighting, natural textures, muted tones, and understated details come together to create an environment that feels calm and unforced. There is a sense of ease to the space that mirrors Goa’s own rhythm. 

The food at AAMI is rooted in comfort, familiarity, and easy all-day dining, bringing together continental staples alongside bold yet approachable Asian flavours, with a strong emphasis on bringing vibrant Thai and Asian-inspired dishes to Candolim, alongside touches of Goa-inspired comfort.

Breakfasts are designed around slow mornings, with dishes like Turkish Eggs, Eggs Benedict, Avocado Toast, Hawaiian Style Breakfast, and Cinnamon Coffee French Toast, while the larger menu features offerings such as the Goa-inspired Podi Calamari Rings, Chilli Lime Prawns, Chicken Satay, Chilli Garlic Noodles, Thai Curry Bowls, Massaman Curry Bowl, Sriracha Chicken Pizza, Wild Mushroom Risotto, Grilled Lemon Herb Chicken with Pepper Sauce, and the signature AAMI Croissanwich. 

Complementing the food is a thoughtfully developed beverage programme featuring signatures such as the Guava Chilli Martini, Espresso Spritz, Virgin Cosmopolitan, Apple Ginger Spritz, and the house AAMI Cold Coffee. Bringing together Anjuna’s much-loved Cream Choc artisanal Italian gelato and Mumbai’s iconic TOISE coffee, AAMI’s beverage and dessert experience has been thoughtfully built around collaborations that celebrate quality-driven homegrown brands. The coffee programme has been developed in collaboration with TOISE Coffee, while artisanal gelato by Cream Choc and desserts like Chocolate Hazelnut Tarts, Forest Berry Cheesecake Gelato, and Passionfruit Sorbet add another layer to the café’s all-day experience. 

“There is a lot of value today placed on experiences that are louder, faster, or more visually driven,” says Rohit Lobo, co-founder of AAMI, Café & Bisto.

We wanted to create something that felt quieter and more lasting. A place where people could genuinely make part of their everyday lives. This perspective also shapes AAMI’s relationship with Goa itself. Rather than drawing from a stylised interpretation of the city, we take inspiration from Goa’snatural pace of living, long mornings, slower afternoons, and spaces that allow people to connect without feeling rushed

As an extension of the larger AAMI experience, the property also houses a collection of thoughtfully designed Airbnb stays and the restored Portuguese villa, allowing guests to experience the space beyond the café itself. RThe property also includes a restored heritage home complete with an indoor pool and media centre, envisioned for intimate group stays, slower weekends, and longer, more relaxed getaways. 

As Goa’s café culture continues to evolve, AAMI introduces a more grounded and enduring perspective. In many ways, AAMI reflects a shift within contemporary hospitality itself, away from excess and towards experiences that feel more personal, more intuitive, and more lasting.
